Dr. Stacy Cacciatore

Professional Work History

I am a Senior communications and training executive with 25 years expertise leading strategic communications at Fortune 500 companies and developing and implementing techniques to educate adult learners of all levels in manners that connect theory with practice, foster engagement, and promote in-depth understanding.

Education

I graduated from Clemson University in 2021, earning my Ph.D in Rhetorics, Communications, and Information Design and I have my Master of Arts in Communications from Queens University at Charlotte.


Writing

I’m the author of several books, including Cacciatore College Cookbook, Candy Around the World, Guilt-Free Cupcakes, Lunch, by me!, A Pet for Emberly and Culinary Duct Tape: Greek Yogurt: Just as versatile, not as tacky.

I write content, shoot promotional videos, and contribute to a variety of social media channels for Disney through my appointment on the planDisney panel.

I primarily write on health, fitness, and wellness topics and have been published in a variety of publications, including Family Fun Magazine, Orbitz, The Charlotte Observer, The Right BiteGreenwiseCharlotte ParentModern Parent and Suburban Woman. I wrote the Fit Family of Foodies blog for Working Mother Magazine and the health and fitness column, Ask Stacy, for My Carolina Town.

Managing Editor

I was the Managing Editor for the WAC Journal, a national peer-reviewed journal on writing across the curriculum. Published by Clemson University, Parlor Press, and the WAC Clearinghouse, The WAC Journal is an annual collection of articles by educators about their WAC ideas and WAC experiences. Previously, I was a Contributing Editor at QU-Queens University Literary Magazine.

Running

I am an RRCA running coach. I have run over 100 road races in a variety of distances from 5ks to marathons. My favorite running event is the Chicago Marathon, which I have run every year since 2017! I’ve combined my two loves, running and Disney to develop Run Disney Mom, which provides running tips, advice, race reviews, healthy recipes, and all things related to running at Disney.
